Garlic peeling.

We have often passed this property where the workers sit around outside and peel the outer skin from the large garlic bulbs and then pack the small garlic cloves into bags. You can imagine the strength of the garlic aroma.
We were also informed that these peelings are used to assist with the decomposition of compost. The Motupe parish has an amazing worm farm project and they use as much of the garlic peelings as possible. They mix it with the usable compost in order to build new worm beds. In turn they then sell the worm castings. Nothing gets wasted.
